An Analysis of the Food Safety and Sanitation Practices of the Tita Sally’s Restaurant in Pansol, Calamba City, Laguna

Abstract:

The study covered the sanitation practices in the area of receiving, storage, kitchen, and dining of Tita Sally’s Restaurant. It tackled the food safety procedures that the establishment practices in terms of receiving, food preparation and cooking, and food service. Moreover, the study covered the compliance of the employees of the restaurant with the sanitation standard operating procedures of the food industry.

The study applied the descriptive method of research. Data were obtained using an observation checklist and an interview with the officer in-charge and staff was also conducted. The collected data were analyzed using mean computation.

Findings revealed that Tita Sally’s Restaurant has very good food safety and sanitation practices. Generally, the staff follows the rules and regulations given to them in terms of the different practices on maintaining food safety and sanitation in the workplace.

In conclusion, the food safety and sanitation practices of Tita Sally’s Restaurant meets most of the standard needed by a restaurant to be rated as very good.

It was recommended that the management continue providing good service to its customers and continue its practices on food and safety sanitation.
