The Food Safety and Sanitation Practices of Gardenside Bar and Restaurant in Sta. Rosa, Laguna

Abstract:

This study aimed to assess the compliance of Gardenside Bar and Restaurant in Sta. Rosa, Laguna to the existing food safety and sanitation practices set by the Department of Health (DOH) in terms of storage management, food handling and preparation, and personal hygiene of the staff. Descriptive qualitative analysis was used in the study and the kitchen head and staff served as its respondents. The study used survey questionnaires and observation checklist in gathering data and were treated using simple computation. It was found out that the existing food safety and sanitation practices of Gardenside Bar and Restaurant as well as its storage management and food handling and preparation had an average compliance to the standards set by the DOH since they were all rated “Good.” In this regard, stock rotation and sanitation and storage equipment were recommended for the storage management. For food handling and preparation, sanitation of work tables and kitchen equipment were likewise recommended.
