The Food Safety and Sanitation Standards of Sizzlers Restaurant in Grove, Los Baños, Laguna

Abstract:

The study aimed to determine the food safety and sanitation procedures applied by Sizzlers Restaurant in compliance with the generally accepted procedures in terms of its kitchen premises, dishwashing, food storage, employees’ personal hygiene, and food preparation and cooking.

 

The study used the descriptive method of research to analyze and interpret the data gathered through observation checklist and interview with the manager.

Findings showed that the restaurant’s procedures on maintaining its kitchen premises and dishwashing was described as good which means that it complies with the set standards but still needs minor improvements. On the other hand, storage procedures, employees’ personal hygiene, and food preparation and cooking were described as very good which means that it complies with slight deficiencies to the standard procedures in actual operation.

 

The study recommended that the management of Sizzler’s Restaurant should conduct proper maintenance of equipment particularly the kitchen lights and proper labelling of containers as these were the areas that got low ratings in terms of kitchen premises. To ensure sanitation, the management should assign staff to ensure cleanliness in garbage disposal. Proper working uniform should also be provided to the staff.
