Back-of-the-House Operation of Boston Café in Grove, Los Baños, Laguna

Abstract:

This case study aimed to determine the operating practices of Boston Café in terms of their menu planning, purchasing, receiving, storing, and compliance to the general standards as a whole.

 

Boston Café is located at the ground floor of Ankers Building in Grove, Los Baños, Laguna. The study determined the operating practices of the café in terms of their menu planning, purchasing, receiving, storing, and compliance to the general standards as a whole. It conducted an interview and used observation checklist to gather data. The actual observations were compared to the café’s compliance through interpreted percentage using descriptive statistics.

 

In terms of menu planning, Boston Café’s is quite different from other food establishments. It is because its management considers the opinion of their customers in planning such. They offer free tastes to know if the customers will like their new dishes which are to be included in the future.

 

As regards purchasing, Boston Café’s manager is the purchasing officer himself. It was found out that the establishment surpassed the general principles of purchasing.

 

In terms of receiving, Boston Café’s manager also acts as the receiver of the delivered items. It was found out that the establishment encompassed the general principles of receiving.

 

With regard to storing, it was found out that Boston Café has a limited storage area and it is not enough for their operation.
