Food Parks in the Philippines: A Strategic Entrepreneurial Management Framework

Abstract:

This study determined the amenity values of food parks and evaluated the sustainability of food stalls in food parks with the purpose of developing a strategic entrepreneurial management framework to guide food stall entrepreneurs in the operation of their food stall business in food parks in the National Capital Region (NCR). It focused on determining the status of operation of food stalls in food parks applying the RCOV framework of Demil and Lecocq (2010), its contribution to economy and the entrepreneurial management competencies of the food stall entrepreneurs. It utilized the descriptive- analytical method of research, employing focus group discussion, key informant interviews and specific statistical tools like t-test, ANOVA and logistics regression. The study disclosed that food parks adopt Porter’s 6th Force, “to complement”, with the amenity values like “no dress code” rule, having security guards, ample parking space, and wide selection of local and foreign food and beverage at reasonable prices. Also, the food park industry is in the “introductory” stage considering the food stalls therein have been operating between one year to less than two years only. Millennial male professional entrepreneurs lead the ownership of food stalls while female millennials college-level students stand out as food park customers. The performance of food stalls in terms of the RCOV framework is between “High Level” to “Very High Level” as assessed by the food park customers and food stall owners, respectively. After two iterations, the logistics regression revealed two factors to comprise the Strategic Entrepreneurial Management Framework having a correctly classified or trustworthy indicator value of 98.17%. These are: (1) Employment Generation (ß=0.061388, z=5.52835, p-value=3.29796); and, (2) Leadership (ß=0.077179, z=5.105612, p-value=3.29726).
