This feasibility study focused on the concept of a food service, specifically a restaurant, that will give the tourists of Museo ni Jose Rizal-Calamba, the ancestral home of the Philippine national hero, a chance to taste the cuisines that Rizal enjoyed. Cocina ni Pepe would be located on Jose P. Rizal Street, Calamba, Laguna across Dr. Jose Rizal’s ancestral house. It would operate from 9:00AM until 5:00PM, from Tuesday to Sunday. There would be five specialties that Cocina ni Pepe will offer, namely: tinola with kalabasa, ginisang monggo, champorado, carne asada, and huevo morconito. These specialties would be served in clay pots to honor the City of Calamba. The recipes to be used are adapted from those that Jose Rizal grew up on. In addition, the employees of the restaurant, specifically the waiters, would wear uniforms that resemble the image of Dr. Jose P. Rizal. In line with this, the order receipt and the pen they would use would be similar to Rizal’s famous pluma at papel.
