Abstract:

The proposed business is Raschietto Creamery. “Raschietto” is an Italian word which means scraper, a tool used to mix, flatten, and roll the ice cream on an ice pan. The business will be established in SM Calamba because of the heavy foot traffic at the mall and the convenience of purchasing direct materials needed to produce the products. Raschietto Creamery will be offering a wide variety of flavors of rolled ice cream which is a liquid mixture that is stirred on an ice pan to incorporate air spaces and is simultaneously cooled to below zero degrees. The business will add an option of crepe with rolled ice cream and waffle cone bowl with rolled ice cream to its menu to give the customers the option to mix and match the texture and customize the flavors of their ice cream. The project was selected because of its potential profitability. With the objective to serve and satisfy the ice cream lovers shopping in SM Calamba, particularly those aged 10 to 59 in a socio-economic classification of Class AB and Class C, the researchers collected data from the 398 respondents through an online survey to study their insights. Researchers used competitor benchmarking, market research, interviews, observation, internet research, and concept test. In the marketing aspect, the demand and supply analysis, the proposed logo and packaging and how the marketing strategies will be executed were shown. The researchers also studied how the rolled ice cream is made. A 3x3 square meter kiosk, practical for a start-up business, fits two ice cream machines as well as refrigerator, crepe maker, waffle cone maker, and blender. The direct materials, utilities, labor, and rent were all discussed in detail under the technical aspect. To be registered as a general partnership, the business will be operated by a store manager and six employees that will be shifting every six hours during weekdays and seven hours during weekends. Two service crew and one cashier will be on duty for every shift. The total project cost is PhP 1,560,000.00. The payback period of the investment is 1.99 years.
