Discipline: Hotel and Restaurant Management
The study focused on the procurement system particularly in procuring exotic meats of Exotik Garden Restaurant. It further determined the problems encountered by the restaurant in the procurement process and the improvements needed to make its services more efficient and effective.
The study adopted the descriptive type of research and used “Diary Method.” Data were obtained through an interview with the supervisor, cook, and kitchen helpers.
Results revealed that Exotik Garden Restaurant’s procurement system is unorganized. However, it was found out that the restaurant’s receiving area is suitable for the restaurant’s needs. The receiving area is also strategically located but the restaurant’s parking area is far from it. On the other hand, the restaurant’s storage system is also unorganized because the products are not properly sorted and classified.
